Apple Pie Sweet Potatoes

At my house, oven space is at a premium on Thanksgiving morning. Last year I came across this recipe for sweet potatoes in Desperation Dinners, a syndicated recipe column. I found it interesting that it was microwaved and not baked.
I grew up on the traditional baked candied yams with loads of butter, brown sugar and miniature marshmallow topping. That made me a little skeptical about this recipe. I was pleasantly surprised by the results. So much so that the dish is making a return appearance on this year’s Thanksgiving table. The potatoes turned out quite good with a sweet taste that was just a little different because of the apple juice concentrate. Nutritionally it is most likely a little better than traditional candied yams dishes.
Apple Pie Sweet Potatoes
1 40 oz. can cut sweet potatoes in syrup
1 cup thawed apple-juice concentrate
4 tbsp. butter
1 TBS. apple-pie spice blend
Drain the sweet potatoes and place in the work bowl of a food processor. Place the apple-juice concentrate, butter and apple-pie spice blend in a 2-cup glass measuring cup and cover with a paper towel. Microwave on high until butter is melted, about 1 ½ minutes. Pour over sweet potatoes and pulse the processor motor until the potatoes are smooth.
Spread the sweet-potato mixture in a 1 ½-quart microwave-safe casserole dish and microwave on high until heated through, about 3 minutes.

I’ve also favored the traditional candied yam dish served at Thanksgiving but variety is good. This recipe sounds like it would be a nice substitute for the other.
