My pal Mike and I are taking a series of 6 cooking classes over the next 3 months at our public library. I actually registered not expecting much but was pleasantly surprised by our first class this week. The sessions are taught by Sarah Mentzer, a trained banquet and catering chef. She was entertaining and informative. I thoroughly enjoyed the class and look forward to the next one in a couple of weeks.
This was my favorite recipe of the night. The taste of basil in a sesame flavored stir fry was so interesting and unexpected. I decided to give it a try tonight. I made some slight alterations since I wasn’t in the mood to go grocery shopping. I used stir fry vegetables in place of the sugar snap peas. They were yummy. I had no fresh basil and really wish I had it to add to the recipe. Hey, it’s winter in Ohio!
Give this a try one night. Stir fries are so simple and tasty. You could vary this recipe in many ways. I might add sliced mushrooms and a little garlic next time. That’s what is great about stir fry. You can make it up on the fly. Just start with a reliable recipe like this for your base.
Basil Pork and Asian Noodles
8 oz. uncooked angel hair pasta
2 tsp Asian sesame oil
1 TBS sesame seed
1 pound pork tenderloin, sliced thin and cubed
1 medium onion, cut into thin slices
1/2 cup purchased stir fry sauce
2 TBS honey
2 cups frozen or fresh sugar snap peas
1/4 cup of sliced fresh basil
Cook pasta according to directions. Drain. Return to pan and add sesame oil. Toss to coat. Set aside.
Heat a large nonstick skillet over medium high heat. Toss sesame seeds into pan. Stir and shake seeds for 2-3 minutes until they are lightly toasted. Pour them over the cooked pasta.
Spray skillet with non-stick pray and return to a medium high heat. Add cubed pork and sliced onions. Stir fry for 3-4 minutes until pork is almost done.
Add stir fry sauce, honey and sugar snap peas. Mix well. Reduce heat to medium. Cover and cook for 3-4 minutes until vegetables are tender crisp.
Stir past into vegetables. Stir for 1 minute to heat the pasta. Add basil and cook for an additional minute. Serve.
